Mango Salad (recipe courtesy of Julia Williams)
- 3 pkg. lemon Jell-O (small)
- 3 c. liquid (juice and water)
- 1/2 c. lemon juice
- 1/2 c. mayonnaise
- 1 large can mangoes
- 8 oz. cream cheese
- 1 c. sour cream
- Brown sugar and honey
- Green grapes
Dissolve Jell-O in boiling water; add mayonnaise and lemon juice. Blend mangoes and cream cheese in food processor. When Jell-O mixture is cooled, blend in mange and cream cheese mixture. Refrigerate until congealed.
Mix sour cream, honey and brown sugar until sweet. Place large spoonful on each serving dish. Garnish with green grapes.
