Happy New Year! Here’s a special treat to add to your New Year celebration from the Chesterbrook Residences cookbook.
Pineapple Pudding

1 – 20 oz. can crushed pineapple
2 eggs, beaten
2 c. soft bread cubes
1/4 c. butter
1/8 tsp. salt
1/2 c. sugar
Cream butter and sugar together. Add beaten eggs and other ingredients. Bake at 325 degrees F for 1 hour.
** Do NOT drain the pineapple!
