Fine Dining at Chesterbrook Residences

Sicilian Baked Cod Fish

Ingredients:

1 pound

Cod Fish Fillets (cut into 4 servings)

4 each

Anchovy Fillets

1 teaspoon

Garlic, finely minced

1 tablespoon

Capers

½ cup

Breadcrumbs

1 pinch

Crushed Red Pepper

2 tablespoon

Fresh Parsley, chopped

Juice and Zest

of 1 Fresh Lemon

1 tablespoon

Canola oil

A sprinkle of

Salt & Black Pepper

1 each

Plum Tomatoes, chopped

Instructions:

  • Place the cod fillets on an oiled baking pan.  Lay one anchovy fillet on each serving of cod.
  • Chop the parsley.
  • Seed and small dice the plum tomatoes and set aside.
  • Chop the garlic and capers to a rough paste.
  • In large mixing bowl, combine the garlic/caper puree with the breadcrumbs, crushed red pepper, lemon juice and zest, canola oil and half the chopped parsley.  Mix well.
  • Sprinkle the cod filets with salt and pepper, and top them with the breadcrumb mixture.
  • Bake at 350°F. for approximately 13-15 minutes or until done.
  • Remove cod from the oven and garnish with the diced tomatoes and chopped parsley.
  • Serve with a mushroom and greens salad and brown rice or rustic oat bread.
