Sicilian Baked Cod Fish
Ingredients:

1 pound

Cod Fish Fillets (cut into 4 servings)

4 each
|
Anchovy Fillets
|
|
1 teaspoon
|
Garlic, finely minced
|
|
1 tablespoon
|
Capers
|
|
½ cup
|
Breadcrumbs
|
|
1 pinch
|
Crushed Red Pepper
|
|
2 tablespoon
|
Fresh Parsley, chopped
|
|
Juice and Zest
|
of 1 Fresh Lemon
|
|
1 tablespoon
|
Canola oil
|
|
A sprinkle of
|
Salt & Black Pepper
|
|
1 each
|
Plum Tomatoes, chopped
|
Instructions:
- Place the cod fillets on an oiled baking pan. Lay one anchovy fillet on each serving of cod.
- Chop the parsley.
- Seed and small dice the plum tomatoes and set aside.
- Chop the garlic and capers to a rough paste.
- In large mixing bowl, combine the garlic/caper puree with the breadcrumbs, crushed red pepper, lemon juice and zest, canola oil and half the chopped parsley. Mix well.
- Sprinkle the cod filets with salt and pepper, and top them with the breadcrumb mixture.
- Bake at 350°F. for approximately 13-15 minutes or until done.
- Remove cod from the oven and garnish with the diced tomatoes and chopped parsley.
- Serve with a mushroom and greens salad and brown rice or rustic oat bread.
